Festive Food Friday - Matcha Christmas Tree Cookies

It is time to play some Christmnas carols and get baking.

For me as soon as I get out my Christmas cookie cutters, it is a sign that Christmas is in the air.

These matcha cookies are delicious and they make lovely gifts. I hope you like them as much as we do.

 

Matcha Christmas Tree Cookies

 

Ingredients

    110 g Unsalted butter (½ cup)
    70 g Brown sugar (⅓ cup)
    100 g Granulated sugar (½ cup)
    200 g All-purpose flour (1 ⅔ cup)
    ½ tsp Baking powder
    ½ tsp Baking soda
    2 tsp Matcha powder
    1 Large egg
    1 Egg yolk
    200 g White chocolate (3.5oz)
    Pinch of salt

Instructions

    Preheat the oven to 180C/355F and line a baking tray with parchment paper.
    In a small saucepan heat the butter over medium heat until dark golden brown (there should be specks of brown milk solids at the bottom of the pan).
    Remove from heat and cool for 5 minutes.
    In a large mixing bowl whisk together the plain flour, baking powder, baking soda and matcha powder.
    Add white and brown sugars into the cooled brown butter, along with the egg and egg yolk, mix until well combined.
    Add the dry ingredients into the wet mixture and stir until just combined.
    Fold in the chopped white chocolate.

Roll into a ball then wrap with cling film  chill for 30 minutes (or fridge for an hour).

Once the dough is chilled,place between two sheets of baking paper and roll flat. Using biscuit cutters cut out shapes and place carefully on a baking tray.
    Bake at 180C/ 355F for 10-12 minutes.
    Leave on baking tray for  mins then remove and place on a cooling rack.
