French Food Friday - Le Lammele

As promised here is the recipe that I use to make Lammele.
La Lammele - Alsacian Easter Cake
Ingredients :
4 eggs
120g of sugar
80g flour
40g cornstarch
53g of almond powder (optional)
zest of a lemon (optional)
1 Tbspn vanilla extract
1 Tbsp Kirsch or rum (optional)
Equipment used :
2 Lamb/Rabbit molds
1 whisk
Preparation :
1. Preheat the oven to 160°C .
2. In the mixer bowl fitted with the mixer, place the eggs with the sugar, vanilla extract, vanilla powder and kirsch and beat for at least 15 minutes. Your mixture should triple in volume and be very frothy.
3. Sift the flour with the cornstarch and pour into the mixture in 3 batches using a spatula and gently lifting the mixture. Finally, add the almond powder.
It is necessary to lift well each time you add flour, especially not to whisk so as not to cause the mixture to fall.
4. Generously butter your molds then flour them.
5. Pour your dough 3/4 of the mold (do not overfill otherwise the dough will overflow) and bake for 20/25 minutes. Check that they are done by inserting a knife.
Note we have found that they are best eaten on the day they are made because the cakes have a tendancy to dry out quickly as the mixture does not contain any butter or milk.
To serve you can sprinkle them with icing sugar (or leave naked) and finish them with a pretty bow.
