French Food Friday - Salade de Chevre Chaud



Bonjour from a cool SW France,

I never thought I would say this in July but whilst the rest of Europe is sweltering we are waking up to lovely cool mornings and highs under 30 degrees; Fingers crossed it stays like this. Goats cheese salad is a favorite of mine as it is one of the first things I ate when I came to France.

This is the recipe I use as a base and you can remove the nuts and/or add some bacon if you like.


Salade de Chevre Chaud

Preparation time: 15 min

Cooking time: 5 min

Total time: 20 min

Servings: 4 people


Ingredients

1 baguette or use 4 slices of  bread cut into triangles if you do not have a baguette

2 logs  of Goat's cheese

3 tbsp honey

1 / 2 cucumber

200 g Salad leaves

40 g walnut kernels

40 g pine nuts

16 cherry tomatoes

1 Tbspn Balsamic vinegar

3 Tbspn Olive oil

1 Tspn Dijon mustard

Salt, pepper


Directions

Preheat the oven in grill position

Wash the cherry tomatoes, cut them in 2 or 4 depending on their size

Peel the  cucumber, or if you prefer you can peel some of the cucumber leaving  one strip out of two.

Cut it in half, cremove the seeds and slice it into thin slices.

Wash  the salad of your choice.

On a slice of bread, place a piece of goat's cheese , sprinkle with a drizzle of honey, and add a few pine nuts.

Bake for 5 minutes, on the grill position.

Arrange the salad on a plate, then add all the elements

Season with a little balsamic vinegar and olive oil, salt and pepper.

Add a few walnuts and roasted pine nuts.

Place the hot toast on the salad and serve immediately.
