Happy Diwali - Pistachio kulfi
Just looking at this photo makes me happy and reminds me of when we lived in India for a year.
It was a fabulous experience and living in the Taj Mahal hotel was one of the best experiences of my life.
A few years later we moved to Dubai where we had an Indian driver who was from Kerala. Kerala is one of my favorite parts of India and it is beautiful and referred to as God's own country.
The last time I made kulfi was as a surprise for our driver who was very happy as he was a little homesick having left his wife and family to work in Dubai, in order to give them as better chance in life.
I hope you enjoy as we much as he did.
Pistachio kulfi (makes 2 generous helpings)
Ingredients
500ml fresh milk
50g chopped pistachio nuts
50g sugar
Pinch of saffron
Directions
Boil the milk with the sugar until the mixture has reduced in quantity by half. Cool and then stir in the pistachios. Spoon the mixture into a container, sprinkle a few strands of saffron on top, cover and place in the freezer. Once it has frozen, the ice cream dessert is ready to eat.
