French Food Friday - Cake aux herbes
This week's recipe comes from one of my favourite French websites and it is perfect as a snack, to take as part of a picnic lunch or for afternoon tea.
You can use either mini loaf tins or a regular sized muffin tin.
Cake aux herbes
Preparation time: 20 min
Cooking time: 45 min
Ingredients
20 g parsley
½ bunch of chives
2 pinches of pepper
1 pinch of salt
2 tbsp. dry white wine
4 eggs
5 g baking powder
250 g flour
150 g grated Gruyere
150 g ham
150 g butter
Directions
Take the butter out of the refrigerator in advance to soften.
Preheat the oven to 200 ° C . Grease the muffin/mini loaf tins.
Wash the parsley and chives. Cut the herbs finely with a pair of scissors.
Cut the ham into cubes.
Take two salad bowls, break the eggs. In the first, put the whites and in the other the yolks.
Using a spoon, mix the yolks with the softened butter cut into small pieces. Add the flour, baking powder, ham, herbs, Gruyère, white wine, pepper and salt. Mix well.
In another bowl, whip the egg whites until stiff. When the whites are firm and resemble whipped cream, gently incorporate them into the preparation in the other bowl.
Pour the preparation into the muffin/mini loaf tins and bake for 20-30 minutes.
