French Food Friday - Babka à la myrtilles
This recipe has just arrived in my inbox this morning.
It is perfect timing as I wanted to make something different and we love blueberries.
Babka à la myrtilles
Ingredients for 1 brioche:
12 g fresh yeast
150 g milk
250g of flour
50 g sugar
3 g of salt
100 g butter
100 g blueberry jam
Preparation:
In a bowl, dilute the yeast in the lukewarm milk.
In the bowl of a food processor, combine the flour, sugar and salt.
Pour the yeast / milk mixture into the dry ingredients.
Knead for 8 min until you get an elastic dough.
Add the softened butter and continue kneading the dough, until it comes off the sides.
Cover the dough with a tea towel and set aside for 1 hour in a warm room away from drafts.
As soon as the dough has puffed up, roll it out into a rectangle (the same length as your cake tin and 3x its width).
Spread the jam on the dough then roll it as tight as possible.
Place the dough in the freezer for 5 minutes, then cut it in 2, lengthwise, then braid the babka.
Place the babka in the cake tin and let rise quietly for 1 hour in a warm room away from drafts.
Bake for 25 minutes at 180 ° C.
Take out of the oven, let the babka cool down before unmolding it on a rack.
