French food Friday - Apple Compote
Bonjour from a sunny SW France,
Our weekly market took place yesterday as it has done every Thursday since 1270.
There were not the normal number of stands but enough to stock up on the basics; fruit, vegetables, cheese etc.
We have an abundance of apples and we much prefer eating cooked to raw apples so I decided to make some sugar free apple compote, which I mixed with this morning's muesli and French Boyfriend ate as a snack last night after dinner.
Note we do not add sugar but if you have a sweeter tooth, feel free to add sugar, honey or sweetener.
Sugar free Apple compote
This is a favorite of ours as it is very healthy and it is great for breakfast, dessert or as a healthy snack. All you need is a few apples, a lemon and a little spice and you are good to go.

Cooking time 25 minutes
Total time 35 minutes
Portions 4 x 100 g portions
Calories around 50 kcal
Ingredients
4 average sized golden apples
1/2 lemon (juice only)
175 ml Water
1 cinnamon stick
1/2 natural vanilla pod
Method
Peel the apples and cut them into not very large pieces.
In a small pot add the chopped apples, the lemon juice, the water and the spices. Add the cinnamon stick split in two and then add the vanilla pod after you have removed the seeds from the interior.
Bring to a boil and then lower the heat and then simmer for 25 or 30 minutes at low moderate heat with the lid on.
Once the apple is cooked, turn off the heat and remove the cinnamon stick and the vanilla pod. Crush the apple with a fork.
Place the compote in a glass jar and let it cool out of the fridge. When it is at room temperature, store it in the refrigerator.
It will keep for a week, not that it ever lasts this long chez nous as we eat it in a couple of days.
