French food Friday - mustard vinaigrette
Last week saw the start of the white asparagus season and although the first of the season are expensive, they are worth every centime as they are delicious.
I toyed with the idea of making a risotto with them but ended up eating them with a simple but tasty mustard vinaigrette and a soft boiled egg. French Boyfriend loved the vinaigrette and in typical French fashion mopped up every drop with his bread.
Note it works with salad or asparagus.
mustard vinaigrette
Ingredients
2 tablespoons white wine vinegar
1 teaspoon Dijon mustard
1 teaspoon wholegrain mustard
1 teaspoon extra virgin olive oil
1 small garlic clove, crushed
1/4 teaspoon caster sugar
Salt & freshly ground black pepper
Method
Whisk together all ingredients and serve immediately.
