Tarte Suisse Aux Pommes


Bonjour mes belles,

I was originally going to wait until Friday to share this recipe with you but after posting a photo on instagram yesterday, I have had some requests for the recipe.
Yesterday was a rainy day in SW France and I thought that I would use a Paul Bocuse recipe as a mark of respect as he passed away at the weekend aged 91 and he really was the King when it comes to French cooking, 3 michelin stars is hard to beat in my humble opinion.

Whilst searching for a suitable recipe I  stumbled across this recipe and thought French Boyfriend would like it. He has munched his way through half of the tarte and informs me that  it is one of the best things that I have EVER made...

Tarte suisse aux pommes

Ingredients
75 gr de beurre mou a température ambiante
75 gr de sucre
100 gr de farine
2 œufs
3 belles pommes tout dépend de la grosseur des pommes
1.5 cuillère a café de levure chimique
1pincée de sel
Zeste d'un citron
Instructions
Préchauffer le four à 180 C (350 F). Beurrer et fariner un moule avec fond amovible et a rebord cannelles pour lui donner une belle forme de tarte. Sinon un moule à charnière fera bien l'affaire ou un moule en silicone.
Travailler le beurre en crème.
Battre les oeufs et le sucre a vitesse moyenne jusqu’à ce que le mélange blanchisse et devienne mousseux.
Incorporer le beurre en crème.
Ajouter la farine et la levure tamisées, le zeste de citron.
Verser dans le moule (je relève un peu les bord).
Disposer les lamelles de pommes sur la surface de la pâte (je les coupe en fine tranches).
Saupoudrer de sucre et disposer quelques lamelles de beurre.
Cuire durant 35 minutes (tout dépend de la chaleur de votre four il faut obtenir une belle surface et que le fond soit cuit).
Démouler la tarte et c'est la ou le moule à fond amovible est utile :).
Saupoudrer généreusement la surface de sucre glace.
Laisser refroidir avant de servir accompagne d'un bon caramel beurre salé.

1 pinch of salt 
Zest of a lemon 

Instructions 
Preheat the oven to 180 C (350 F). Butter and flour a mold with removable bottom.
Cream the butter.Beat the eggs and sugar at medium speed until the mixture whitens and becomes foamy.Stir in the butter cream.Add sifted flour and yeast, lemon zest.Pour into the mold.Arrange the apple slices on the surface of the dough (I cut them into thin slices).Sprinkle with sugar and arrange a few slices of butter.Bake for 35 minutes (depending on the heat of your oven you have to get a nice surface and the bottom is cooked).

Unmold the pie and this is where the mold with removable bottom is useful :). 
Sprinkle the surface with icing sugar generously.Let cool before serving accompanied by a good salted butter caramel.
