French Food Friday...Les Nonnettes de Dijon à la Marmelade d'oranges





I am in the mood to make some nonnettes.

Nonnettes are a Dijon specialty made with gingerbread and orange marmalade. 

   Les Nonnettes de Dijon à la Marmelade d'oranges

Ingredients
• 80 g butter
• 100 g sugar
• 120 g rye flour
• 160 g of flour
• 10 g baking soda 
• 200 g honey
• 1 tbsp. tablespoons gingerbread spice mix
• 1 tbsp. heaped coffee powder cinnamon
• Orange marmalade.

1 Heat the oven to th. 6-7 (200°C). Mix 150 mls of water in a saucepan with the sugar, honey and butter. Bring to the boil for 1 to 2 minutes. Add the spices and set aside off the heat.

2 Sift the two flours with the baking soda. Pour the spicy syrup into a bowl. Add the flour mixture, whisk until you obtain a smooth and homogeneous paste. Half fill the muffin tin with the mixture and in the centre of each one, make a indent in the centre and place 1 tsp of orange marmalade,

3 Cook 20 mins. Let cool and unmold.

Tip: keep these nonnettes for a week (or more) in a box, well wrapped in stretch film.
