Chinese New Year - Sweet and Sour Pork
Next Wednesday we will be celebrating the Chinese New Year.
One of the recipes that is on the cards is sweet and sour pork. French boyfriend adores this recipe, it is quick and easy.
Sweet & Sour Pork
INGREDIENTS
400g pork fillet, trimmed and thinly sliced
1/4 cup (60ml) salt-reduced soy sauce
1/4 cup (60ml) tomato sauce
1 tablespoon white vinegar
1 teaspoon brown sugar
1 small onion, cut into wedges
1 green capsicum, cut into thin strips
2 carrots, washed and sliced
150g chopped fresh pineapple
Steamed white rice, to serve
METHOD
Step 1
Place the pork and 2 tablespoons of the soy sauce in a non-metallic bowl. Toss until the pork is well coated. Cover and refrigerate for 10 minutes.
Step 2
Place the remaining soy sauce in a small bowl and combine with the tomato sauce, vinegar and brown sugar. Set aside.
Step 3
Place a wok or large non-stick frying pan over medium-high heat and spray with oil spray. Cook the pork in batches until browned, then remove and wipe out the wok with paper towel.
Step 4
Spray the wok with a little more oil spray. Add the onion, carrots and capsicum and stir-fry for 4 minutes or until just tender. Return the pork to the wok, along with the pineapple and soy sauce mixture and cook for another 3 minutes. Serve immediately with steamed rice.
