French Food Friday - Cranberry and thyme bread rolls
I have spent the last few days in the kitchen busy baking.
Yesterday I made mini panettone, cranberry friands and zimtsterne.
My panettone recipe uses a lot of egg yolks so in order not to waste the whites I then made the mini mandarin and cranberry friands and zimsterne.
Next on my list is these cranberry and thyme rolls.
These would make a lovely addition to a festive meal or you could serve them with salad for a light and tasty lunch.
Cranberry and thyme bread rolls
Ingredients
500g white bread flour
1 ½ teaspoon dried yeast
2 tbs olive oil
1 tbs dried cranberries
1 tbs dried thyme
1 teaspoon salt
1 teaspoon sugar
About 225 ml warm water
To finish
Beaten egg, Sesame, Poppy seeds
Directions
1.Put the flour, salt and yeast and sugar and oil into the bowl of the mixer.
2.Add the thyme and cranberries.
3.Mix to a soft dough with the warm water.
4.Mix for a 3 or 4 minutes.
5.Leave it is a warm place to rise for 30 minutes.
6.Divide the dough 8 pieces and form them into rolls, then place on a baking sheet and leave to prove for another 30 minutes.
7.Top with a little beaten egg, and sprinkle with seeds.
8.Cook in a hot oven – 210 degrees, for about 10 minutes until the rolls sound hollow when tapped on the bottom.
