French food Friday - mustard vinaigrette







The white asparagus season is well and truly underway, the price is always highest the first week so you can pay a premium or wait a week or so until they become more affordable. 

We purchased some yesterday and I cannot wait to eat them.

 
My favourite way to serve them is with a  tasty mustard vinaigrette and a soft boiled egg.

Note this vinaigrette also works with a salad.


mustard vinaigrette

Ingredients

2 tablespoons white wine vinegar

1 teaspoon Dijon mustard

1 teaspoon wholegrain mustard

1 teaspoon extra virgin olive oil

1 small garlic clove, crushed

1/4 teaspoon caster sugar

Salt & freshly ground black pepper

Method

Whisk together all ingredients and serve immediately.
