An Easter Treat - Matcha Bunny Cookies


 Easter is finally here and we are looking forward to a lovely sunny long weekend.

Matcha and chocolate go well together and as you know, I love my matcha.

These bunny cookies are perfect with a cup of tea or you can use them as decorations for cupcakes, easter cakes etc.

They also make lovely gifts and I have packaged mine with some small easter eggs.


Matcha Bunny Cookies

 

Ingredients

    110 g Unsalted butter (½ cup)
    70 g Brown sugar (⅓ cup)
    100 g Granulated sugar (½ cup)
    200 g All-purpose flour (1 ⅔ cup)
    ½ tsp Baking powder
    ½ tsp Baking soda
    2 tsp Matcha powder
    1 Large egg
    1 Egg yolk
        Pinch of salt


Instructions
    
    In a small saucepan heat the butter over medium heat until dark golden brown (there should be specks of brown milk solids at the bottom of the pan).


    Remove from heat and cool for 5 minutes.


    In a large mixing bowl whisk together the plain flour, baking powder, baking soda and matcha powder.


    Add white and brown sugars into the cooled brown butter, along with the egg and egg yolk, mix until well combined.


    Add the dry ingredients into the wet mixture and stir until just combined.


    
Roll into a ball then wrap with cling film  chill for 30 minutes (or fridge for an hour).

Preheat the oven to 180C/355F and line a baking tray with parchment paper.

Once the dough is chilled,place between two sheets of baking paper and roll flat. Using biscuit cutters cut out shapes and place carefully on a baking tray.


    Bake at 180C/ 355F for 10-12 minutes.


    Leave on baking tray for  mins then remove and place on a cooling rack.
