French Food Friday - Soupe aux epinards

 

Why is it that it always seems a good idea at the time and I never stop to think of the consequences from buying too many vegetables?

We have a lot of spinach and a soup is a perfect way of using up a lot in one go.

 

 Soupe aux epinards

Serves: 4 

Preparation time: 15 mins

Cooking time: 15 mins

Ingredients

1 onion

1 carrot

4 potatoes (medium size)

750 mils water

50 grams butter

salt, pepper

oregano

500 grams spinach 

1 chicken stock cube

2 Tablespoons cream fraiche

 

 Method

 1. Heat some olive oil in a pressure cooker, sauté the onion for a few minutes. 

2. Add the sliced ​​carrot, potatoes and spinach.

3. Add 750 ml of water, crumbled stock cube, oregano and salt. 

4. Leave to cook for 15 minutes in a pressure cooker. 

5. Put everything in a blender with the butter and fresh cream. 

6. Season with salt and pepper to your liking.
