Gluten free Raspberry & Lime Friands





Bonjour from a sunny SW France,

We have a gluten free guest staying so I am brushing up on my sans gluten recipes.

These friands turned out well and our French friends and guests enjoyed them and did not realise that tasted any different to "normal friands".

RASPBERRY & LIME FRIANDS 


Makes 12
Ingredients: 
  • 5 egg whites, lightly beaten
  • 1 1/3 cups almond meal (ground almonds)
  • 2 teaspoons finely grated lime rind
  • 1 tablespoon lime juice
  • 1 1/2 cups icing sugar (confectioner’s sugar), sifted
  • 2/3 cup gluten-free plain flour
  • 150g butter, melted and cooled
  • 24  frozen raspberries
Method:
  1. Preheat oven to 190°C (375°F). Grease a 12-hole friand or medium muffin pan.
  2. Combine egg white, almond meal, lime rind, lime juice, icing sugar, flour and butter in a bowl. 
  3.  Divide mixture evenly between holes of prepared pan. Top each friand with two raspberries, gently inserting them half way into the mixture.
  4. Bake for 25-30 minutes or until golden and firm to touch. Stand in pan for 2 minutes. Turn onto a wire rack to cool. Serve with a light sprinkling of icing sugar.
