font-size: medium;">Note the recipe is for two so just multiply the ingredients to satisfy your requirements.</span></p><p style="text-align: center;"><span style="font-family: courier; font-size: large;"><b><br /></b></span></p><p style="text-align: center;"><span style="text-align: left;"><span style="font-family: courier; font-size: large;"><b>Pierre Koffmann's </b></span></span><span style="font-family: courier; font-size: large;"><b>Pistachio soufflés</b></span></p><p style="text-align: center;"><span style="font-family: courier; font-size: large;"><b><br /></b></span></p><p><span style="font-family: courier; font-size: medium;">To make the pistachio crème pâtissière:</span></p><p><span style="font-family: courier; font-size: medium;">500ml whole milk</span></p><p><span style="font-family: courier; font-size: medium;">120g egg yolks</span></p><p><span style="font-family: courier; font-size: medium;">100g caster sugar</span></p><p><span style="font-family: courier; font-size: medium;">40g pistachio paste</span></p><p><span style="font-family: courier; font-size: medium;">50g plain flour</span></p><p><span style="font-family: courier; font-size: medium;">Heat the milk in a pan over a medium heat and bring to a boil.</span></p><p><span style="font-family: courier; font-size: medium;">As the milk heats up, whisk together the egg yolks and sugar for 5 minutes. You want to keep doing this until they are mixed together, the volume of the mixture has increased, and the colour of the mixture is lighter.</span></p><p><span style="font-family: courier; font-size: medium;">Then add the flour and whisk thoroughly.</span></p><p><span style="font-family: courier; font-size: medium;">Once the milk comes to a boil, whisk in the pistachio paste until combined. “When you cook the pistachio with the milk, you’ve got that beautiful aroma and it reminds you of when you were kids,” says Pierre Koffmann.</span></p><p><span style="font-family: courier; font-size: medium;">Slowly pour a little hot milk into the egg yolk mixture and whisk. Continue to add more milk, little by little, whilst continuously whisking. Then tip the whole mixture back into the pan of hot milk and heat on a medium heat. Cook the mix, stirring gently with your spatula until it becomes very thick. Tip the mix into a bowl and leave to cool completely.</span></p><p><span style="font-family: courier; font-size: medium;"><br /></span></p><p><span style="font-family: courier; font-size: medium;">To make 2 soufflés:</span></p><p><span style="font-family: courier; font-size: medium;">3 egg whites</span></p><p><span style="font-family: courier; font-size: medium;">150g caster sugar</span></p><p><span style="font-family: courier; font-size: medium;">100g pistachio crème pâtissière</span></p><p><span style="font-family: courier; font-size: medium;">Icing sugar to serve</span></p><p><span style="font-family: courier; font-size: medium;">Preheat your oven to 180°C/350°F.</span></p><p><span style="font-family: courier; font-size: medium;">Pour the egg whites into a mixing bowl and whisk until thick and the volume of the mixture has increased. Add the caster sugar and keep whisking until you create a thick, glistening meringue.</span></p><p><span style="font-family: courier; font-size: medium;">Beat the pistachio crème pâtissiere in a clean bowl.</span></p><p><span style="font-family: courier; font-size: medium;">When you’re confident your meringue is done, add two heaped dessert spoons of the meringue into the crème pâtissiere mixture, but this time, fold it in gently using your spatula. “What you want to achieve is a perfect mix between the meringue and the crème, you don’t want to finish with a big blob of meringue in the middle of your soufflé,” explains Pierre Koffmann.</span></p><p><span style="font-family: courier; font-size: medium;">Fill 2 ramekins with the souffle mixture, giving them a gentle tap on the kitchen worktop to ensure there are no air pockets. Use a knife to smooth the surface of the souffle and then run your thumb around the edge of the ramekin to encourage it to rise without sticking to the sides.</span></p><p><span style="font-family: courier; font-size: medium;">Slide the souffles into the oven for 12-15 minutes. Keep an eye on them. They should rise and be golden on the surface.</span></p><p><span style="font-family: courier; font-size: medium;"></span></p><p><span style="font-family: courier; font-size: medium;">Remove them from the oven and dust with icing sugar. You can enjoy them on their own or with cream, sorbet or ice cream. font-size: medium;">5 chestnut mushrooms, halved</span></p><p><span style="font-family: courier; font-size: medium;">Drizzle vegetable oil</span></p><p><span style="font-family: courier; font-size: medium;">10g blanched hazelnuts</span></p><p><span style="font-family: courier; font-size: medium;">1 black garlic clove, mashed</span></p><p><span style="font-family: courier; font-size: medium;">½ rosemary sprig, leaves picked and chopped</span></p><p><span style="font-family: courier; font-size: medium;">1 medium free-range egg, beaten</span></p><p><span style="font-family: courier; font-size: medium;">320g ready-rolled puff pastry sheet</span></p><p><span style="font-family: courier; font-size: medium;">½ x 100g goat’s cheese wheel (cut the wheel horizontally through its equator to create a thinner disc of cheese)</span></p><p><span style="font-family: courier; font-size: medium;">Method</span></p><p><span style="font-family: courier; font-size: medium;">Heat the oven to 180°C fan/ gas 6. Put the thick ring of butternut squash on a baking tray along with the chestnut mushrooms. Drizzle the vegetable oil over both, season with salt and roast for 12 minutes. Add the hazelnuts to one edge of the tray and roast for another 8 minutes. Put the squash on a plate to cool, then tip the nuts and mushrooms into a food processor. Add the black garlic, rosemary and two-thirds of the egg. Whizz to a coarse paste, season, then set aside to cool.</span></p><p><span style="font-family: courier; font-size: medium;">Once everything is cool, unroll the pastry sheet and cut out 2 circles, one about 3cm larger than the ring of squash and one about 5cm larger than the ring of squash (use a plate or bowl as a guide). Put the smaller circle of pastry on a piece of baking paper and sit the ring of squash in the centre. Press the goat’s cheese into the hole in the centre (you may need to trim it a little). Cover the squash and cheese in the mushroom mixture, using your hands to shape it into a dome.</span></p><p><span style="font-family: courier; font-size: medium;">Brush a little of the remaining egg around the edge of pastry, then lay the second circle of pastry on top. Smooth it down over the dome of filling, then press the pastry edges together. Use a small sharp knife to neaten the edge, then make a small hole at the top of the dome. Lightly score the pastry dome with curved lines (this will help the pastry puff up evenly). Brush the top with more egg. Cover and chill (or freeze – see Make Ahead) until ready to cook.</span></p><p><span style="font-family: courier; font-size: medium;">Heat the oven to 200°C fan/ gas 7. Bake the pithivier on a baking tray for 30 minutes (or 40 minutes if cooking from frozen) until the pastry is a deep golden colour. Heat the oven to 200°C.</span></p><p><span style="font-family: courier; font-size: large;">2. Make a rustic purée with the Bramley apple and sugar by cooking them together in a pot on a moderate heat for 15 minutes.</span></p><p><span style="font-family: courier; font-size: large;">3. Carefully cut the Cox apple halves thinly with a very sharp knife.</span></p><p><span style="font-family: courier; font-size: large;">4. Spread the apple purée on the pastry discs, leaving a 1cm edge. Brush the edge with the egg wash.</span></p><p><span style="font-family: courier; font-size: large;">5. Then arrange the apple slices in a fan design on top of the purée and brush with a little more egg wash, then dust with lots of icing sugar.</span></p><p><span style="font-family: courier; font-size: large;">6. Bake for around 15 to 20 minutes, until the top is coloured and the base is crisp.</span></p><p><span style="font-family: courier; font-size: large;">7. font-size: medium;">French Boyfriend is slowly working his way through the remaining desserts, he refused to give the extras away as he claims this is the best dessert I have ever made.</span></p><p><span style="font-family: courier; font-size: medium;">I am now looking for a smaller mold as we thought the dariole mold was a little on the large side, another option would be to half fill the molds or just eat dessert and nothing else.</span></p><p><span style="font-family: courier; font-size: medium;">Ingredients</span></div><p><span style="font-family: courier; font-size: medium;">¼ cup freshly grated Parmesan cheese</span></p><p><span style="font-family: courier; font-size: medium;">4 tablespoons unsalted butter</span></p><p><span style="font-family: courier; font-size: medium;">½ cup all-purpose flour</span></p><p><span style="font-family: courier; font-size: medium;">2 cups milk</span></p><p><span style="font-family: courier; font-size: medium;">1 bay leaf</span></p><p><span style="font-family: courier; font-size: medium;">½ pound fresh goat cheese (crumbled)</span></p><p><span style="font-family: courier; font-size: medium;">Salt and freshly ground pepper</span></p><p><span style="font-family: courier; Butter a 2-quart soufflé dish. Add the Parmesan and turn to evenly coat the bottom and side of the dish. Tap out any excess.</span></p><p><span style="font-family: courier; font-size: medium;"><br /></span></p><p><span style="font-family: courier; font-size: medium;">In a medium saucepan, melt the butter over moderate heat. Whisk in the flour until a smooth paste forms. Whisk in 1 cup of the milk until smooth, then whisk in the remaining 1 cup of milk and add the bay leaf. Bring the sauce to a boil, whisking constantly. Reduce the heat to low and cook, whisking frequently, until very thick, about 10 minutes. Scrape into a large bowl. Stir in the goat cheese and season with salt and pepper, then whisk in the egg yolks. Cover and let cool, then stir in the herbs.</span></p><p><span style="font-family: courier; font-size: medium;"><br /></span></p><p><span style="font-family: courier; font-size: medium;">In a large stainless steel bowl, beat the egg whites with a pinch of salt until firm but not dry. Fold one-third of the beaten whites into the cheese sauce. Every year in February, the Romans would repay the god’s vigilance with a festival, which doubled as a celebration of fertility and the onset of Spring. Newlywed women would be whipped by februa (strips of goat skin and the derivation of our word February) to purify their bodies in preparation for childbirth.</span></p><p><span style="font-family: courier; font-size: medium;">One of the highlights of Lupercalia came on February 14 with an erotic tribute to Juno Februata, the goddess of feverish love. The names of maidens were drawn at random by young men and the resultant couple would become partners at the feast and even for life.</span></p><p><span style="font-family: courier; font-size: medium;">“The bishop was executed on February 1. On the eve of his death, he sent a passionate letter to his beloved, signed simply ‘your Valentine’.</span></p><p><span style="font-family: courier; font-size: medium;">The festival was extremely popular and lasted for centuries. After Constantine had christianised Rome, the Church tried to clamp down on pagan activities and Lupercalia, with its lurid temptations, was an obvious target. Pope Galasius, in the 5th Century, needed to find a suitable replacement for the wolf god Lupercus and chose a bishop who had been martyred 200 years previously: Valentine.</span></p><p><span style="font-family: courier; font-size: medium;">The emperor Aurelius had imprisoned Valentine in 272 AD for continuing to marry Christian soldiers, despite royal decree (Aurelius needed them to fight his wars). In prison, the bishop cured his jailer’s daughter of blindness and the pair fell head over heels in love (quite literally ‘love at first sight’.) Ultimately, their desires were frustrated as the bishop was executed on February 14 the following year. On the eve of his death, the condemned man sent a passionate letter to his beloved, signed simply ‘your Valentine’.</span></p><p><span style="font-family: courier; font-size: medium;">The legacy of St Valentine has survived long after his death. There was such an uproar over his execution among the Christian community in Rome, that the authorities had to bury his body quickly to avoid a riot. But three of his followers found his body and took him to Terni in Umbria, where he is perfectly embalmed in the Basilico de S Valentino.</span></p><p><span style="font-family: courier; font-size: medium;">Young lovers still travel to the tomb to ask his blessing and the city throws a month long festival in his honour every year in February. Stir in remaining ingredients and refrigerate until flavours develop (overnight). Churn in an ice-cream machine, then freeze. </span></li>

Fold in cream in batches until just combined. Pour into ten 180ml dariole moulds and refrigerate until firm (4 hours). </span></li>
